BelleStyle Rainbow Flaxseed Slaw
one bag coleslaw mix or broccoli slaw (available at Trader Joe's)
1/4 cup golden flaxseeds
1 bag shredded carrots
one can chick peas (garbonzo beans rinsed)
1 cup frozen corn
1 cup frozen peas
1/2 cup red pepper
1/c cup red onion sliced small
1/2 cup crumpled feta cheese
1/4 cup rice vinegar
2 tablespoons extra virgin olive oli
salt & pepper to taste
dried herbs: dill, parsley, chives, basil,
Lemon or Lime juice fresh
Add slaw, frozen corn, peas, carrots, onions, red pepper, chick peas, flaxseeds, olive oil, rice vinegar, salt pepper, dried herbs, lemon or lime juice. Mix together slowly so that everything is coated. Add feta cheese. Fold together. Let sit for about an hour in the refrigerator. Salad might need more salt and pepper to taste before serving.
This is a beautiful Slaw that can be used as a side dish or as a garnish under fish or chicken. It also is wonderful on Corn chips, as an add on to Hummus.
